Melitzanosalata (griechisch μελιτζανοσαλάτα) ist eine Vorspeise (Meze), die aus Auberginen hergestellt wird. Diese verleihen ihr eine typisch braun-goldene Farbe. Die im Ofen gebratenen Auberginen werden mit Knoblauch geschlagen und als "Püree", mit Essig, Olivenöl, Salz und Pfeffer serviert. Melitzanosalata dient gewöhnlich als Dip.
