Lactalbumin ist ein Protein, das zusammen mit Lactose-Synthase A den Enzymkomplex Lactose-Synthase bildet, der den letzten Schritt in der Biosynthese von Milchzucker katalysiert. Lactalbumin kommt in der Milch der Säugetiere vor, nachdem es in den Milchdrüsen produziert wurde. Es ist eng verwandt mit dem Enzym Lysozym C.[1]

Das Lactalbumin des Hausrinds (Bos taurus) ist ein menschliches Allergen. Es wird beim Kochen denaturiert; diese Änderung ist aber zu 90 Prozent reversibel und wird beim Abkühlen rückgängig gemacht. Kuh-Lactalbumin ist auch ein Bestandteil des Molkeneiweißes der Kuhmilch. Es stellt etwa 4 Prozent des Gesamtkuhmilcheiweißes.[2][3]
