Biryani (auch Birijani; Urdu: بریانی; Hindi: बिरयानी, biryānī) ist ein Reisgericht. Der Name Biryani entstammt dem persischen Wort beryā(n) (بریان) und bedeutet "gebraten", "geröstet". Regionale und lokale Varianten von Biryani gibt es im ganzen Mittleren Osten bis nach Südostasien.

Hauptbestandteil ist gewürzter Reis, besonders Basmatireis. Dazu gibt man gewürztes und gebratenes Fleisch wie etwa Lamm, Hammelfleisch, Hühnchen oder Rindfleisch. Auch vegetarische Variationen sind möglich und gelegentlich isst man Biryani mit gekochten Hühnereiern. Typisch sind außerdem Zwiebeln, Chilis und Nüsse, die man gebraten dem Reis zufügt. Das Gericht kann weiter mit Rosinen sowie anderen Zusätzen verfeinert werden. Beliebt sind Varianten mit Joghurt, Gemüse oder Mango-Chutney. Mittlerweile findet man spezielle fertige Gewürzmischungen im Handel.
