Wakame (jap. 若布, 和布 oder ワカメ; kor. 미역, miyeok) wird aus der Braunalge Undaria pinnatifida hergestellt. Diese Alge wird neuerdings auch in der Bretagne erfolgreich angebaut und vermarktet. Wakame dient getrocknet häufig als Zutat in der japanischen Küche, z. B. für Miso-Suppe, die dadurch ein kräftigeres Aroma erhält. In der koreanischen Küche wird diese Alge für Suppen, Breie und Salate genutzt. Die Salate gibt es in unterschiedlichster Form und Zubereitung - Meist ist Sesam ein beliebtes Gewürz um die Algen zu verfeinern.

Wakame ist iodhaltig (10 mg/100 g Trockensubtanz Iod), daneben enthält es unter anderem auch Alginsäure.
